Before you mix the ingredients, preheat the oven to 350°.
Step 2: Mash the Bananas
Then, mash three overripe bananas.
Step 3: Add the Oats
Next, add in three cups of instant oats.
Even though your kids might not understand the health benefits of these muffins, you are going to feel good giving them something nutritious each morning.
Step 4: Add the Peanut Butter
Then, add a cup of peanut butter. You can also substitute this peanut butter for a nut free butter too.
By adding it into these mini muffins, you can add protein in a delicious way. These muffins are so good with that peanut butter flavor.
Step 5: The Chocolate Chips
Next, toss in a cup of semi-sweet chocolate chips. You could also use dark or milk chocolate as well.
Step 6: Mix
Then, mix all the ingredients together.
Step 7: Spray the Pans
Be sure to spray the mini muffin pans. I just used Pam.
Step 8: Add the Batter
Then, add about a tablespoon of batter into each mini muffin container. You can use liners, but I’d still spray the liners just so that they don’t stick.
Here is a budget friendly mini muffin tray at Target. For this recipe, you will need two of these for 4 dozen mini muffins.
Step 9: Bake & Enjoy
Bake these muffins for about eighteen minutes and enjoy!
Since you are making 48 at a time, freeze them by placing them into small baggies or just a freezer container to keep them fresh and ready for the mornings. I normally pack four for myself when I am on the go.

Ingredients
- 3 Medium Bananas
- 3 Cups Instant Oats
- 1 Cup Peanut Butter (Creamy)
- 1 Cup Chocolate Chips (Semi-Sweet, Milk, or Dark Chocolate)
Instructions
- Preheat the oven to 350.
- Mash three medium sized bananas.
- Add in 3 cups of instant oats.
- Add 1 cup of peanut butter.
- Add 1 cup of chocolate chips.
- Mix all the ingredients together.
- Spray mini muffin pans and scoop 1tbsp of batter into each muffin container.
- Bake the muffins for 18 minutes.
