These baked apple cookies are outstanding. They are the perfect almost fall dessert. I’m not thinking of pumpkin cookies yet, but apple does sound delicious right now. Not only do you use apples in this recipe, but you also use applesauce. Both ingredients are always in stock in our house. This post is all about baked apple cookies.

Baked Apple Cookies

First, preheat the oven to 375 degrees. Then, add a yellow cake mix to the mixing bowl.
There is nothing easier than starting a recipe off with a cake mix.
Step 2: The Apples
Then, add 1 cup of diced apples. We love honeycrisp apples, so I diced one up for this recipe. Of course, you can use your favorite apple for this ingredient. We also love pink ladies too.
Step 3: The Applesauce
Then, add a half cup of applesauce to the mixing bowl.
You can use unsweetened or sweetened. We are always eating cinnamon applesauce, so I always use that.
Step 4: The Cinnamon
Then, add a teaspoon of ground cinnamon. This spice makes for a more fall taste. Pair this cookie with apple cider and you are automatically in the season.
Step 5: The Eggs
Next, add two eggs and mix all the ingredients together. Since the batter gets pretty thick, I just use a wooden spoon to mix everything together.
Step 6: Bake the Cookies
Finally, using a small scooper, place a dozen cookies on a large cookie sheet covered in parchment paper or a silpat mat.
Bake for 12 minutes. You should be able to make two dozen cookies with this recipe.

- 1 yellow cake mix
- 1 cup apples (diced)
- 1/2 cup applesauce
- 1 tsp ground cinnamon
- 2 eggs
Instructions
- Preheat the oven to 375 degrees. Then mix all ingredients in a large mixing bowl. Scoop 12 cookies onto a large cookie sheet and bake for 12 minutes. You should be able to make 2 dozen cookies with this recipe. Enjoy!
