To make that even better, add a few more ingredients to your normal cinnamon roll breakfast for an even better start to your day.
This recipe is super easy to follow, and you can use a roll of your favorite cinnamon rolls for the dish. Right now we are on a pumpkin kick, so this recipe has pumpkin rolls in it instead of just cinnamon.
Plus, you can’t go wrong adding bacon to any meal, so why not to a breakfast casserole too?

Jump to RecipeStep 1: Cook the Bacon
First, start this recipe by cooking your bacon in the oven. I used a 12-ounce container of turkey bacon, but any bacon will do. To cook it quickly and without a ton of mess, place it on a tray covered in foil. Cook the bacon for about 20-25 minutes at 400 degrees.
Step 2: Prep the Cinnamon Rolls
Then, on a 7×11 baking sheet covered in cooking spray, break up a roll of cinnamon rolls. We used this brand because we are on a pumpkin cinnamon roll kick. They are outstanding, but any type of cinnamon roll will work.
Step 3: The Bacon
Next, cover the cinnamon rolls in bacon pieces.
Step 4: The Eggs
Then, pour two eggs over the casserole dish. Be sure to whisk your eggs prior to covering the cinnamon rolls. You can use the Just Egg substitute for two eggs by adding in 6 tablespoons of the liquid eggs instead.
Step 5: The Milk
Next, pour a third cup of milk over the dish. Since I am lactose-free, I used the Fairlife Lactose-Free Skim Milk option.
Step 6: Bake That Dish
Then, place the casserole in the oven for 30 minutes at 375 degrees.
Step 7: Ice the Casserole
Once the casserole is baked, cover it in the frosting from the cinnamon rolls.

Ingredients
- 12-16 oz Bacon
- 1 can Cinnamon Rolls
- 2 Eggs
- 1/3 cup Milk
Instructions
- First, cook the bacon in the oven at 400 degrees for 20-25 minutes. Then, spray a 7×11 baking dish with cooking spray. Then, break the cinnamon rolls apart and spread all over dish. Then, break up the bacon into smaller pieces, and place the pieces evenly all over the baking dish. Pour whisked eggs and the milk evenly over the casserole dish. Bake for 28-30 minutes at 375 degrees. Ice the casserole with the icing from the cinnamon rolls and enjoy!
