If you love Oreos, these lemon Oreos are so very good. Plus, Oreos are actually Vegan, which means that they do not contain any lactose. You can grab a family-sized box at Target for less than $5, which these days, seems like a deal.
These little dessert cups are quite the treat. Also, they are perfect for spring. They look beautiful and would make any dessert table pop for an event.

Jump to RecipeStep 1: Start with the Pudding
First, add a bag of vanilla pudding to the mixing bowl. You will need the 5.1-ounce container of the vanilla pudding mix by Jell-O. If you want to top the cups off with pudding then you will need to make a double batch of this pudding.
Step 2: Almond Milk & Mix
Then, add 1 1/4 cups almond milk and mix. You can use a whisk to mix this combo for at least two minutes. I used the unsweetened vanilla almond milk from Target, which is only 30 calories. Of course, any recipe that calls for 24 Oreos, isn’t necessarily about the calorie count.
You can use regular mix, but if you do, then you need to add the exact amount of milk that is specified on the box. Also, if you use regular milk these pudding cups won’t be Vegan.
Make sure to leave this pudding set for about five minutes. While this is happening, you can crush the Oreos.
Step 3: Crush the Lemon Oreos
Next, add about two sleeves of lemon Oreos to a storage bag. That’s a total of about 24 oreos. Crush the Oreos with a rolling pin. You will end up with somewhat crushed clumpy Oreos, which is perfect.
Step 4: Prepare the Cups
For your final step, layer two small scoops of Oreos, a larger scoop of pudding, and then a top scoop of Oreos into a cup.
I used these little cups from Target. You could use any cups you like though.
Step 5: Add Sprinkles (optional)
Since it’s close to spring, I used a spring mix sprinkle to top these little pudding cups off.
These sprinkles from Target are always so cute! Of course, you don’t need the sprinkles, but it does make for a prettier display. 🙂

Ingredients
- 1 Container Vanilla Pudding (5.1oz)
- 1.25 Cup Unsweetened Vanilla Almond Milk
- 2 Sleeves Lemon Oreo Cookies (about 24 cookies)
Instructions
- Mix the pudding with the almond milk and let set for five minutes. Then, crush the 24 lemon Oreos in a storage bag using a rolling pin. Then, add a scoop of crushed Oreos to a cup, then a layer of pudding, and then top with more crushed Oreos. You can also top with sprinkles. You should be able to make about six containers.
