These vegan cherry bars are delicious. They are super easy to make and perfect for brunch, a sweet dessert or just a tasty snack during the day. Everyone loves them and really you can’t tell that they are made with vegan butter or a vegan-based cake mix. This post is all about vegan cherry bars.
Are you in love with cherry pie filling? Well, I am in love with cherry pie filling and I love to use it in any recipe that I can. These cherry pie bars are quite the treat. Although it is tempting to eat the pie filling while making them, you will need all 21 ounces of the can in order to complete a tray of these sweet bars. Yes, I do struggle to not steal some from the dish.

Vegan Cherry Bars
Jump to RecipeStep 1: Preheat Oven
First, preheat the oven to 350 before you start mixing anything together.
Step 2: Add Quick Oats
Then, add two and half cups of quick oats to a mixing bowl.
Step 3: Add Cake Mix
Next, add a box of yellow cake mix. The Whole Foods 365 brand has a yellow cake mix that is Vegan.
Step 4: Add Vegan Butter & Mix
Then, add in 3/4 cup Vegan butter softened. I just put it in the microwave for about 20 seconds.
Step 5: Spray Dish
Then, spray a 9×13 baking dish to ensure that the bars come out of the dish easily.
Step 6: Add Layer
Then, add a layer of the mixture to the bottom of the dish. You will use half the mixture for the first layer.
Step 7: The Cherries
Next, layer the 21 ounce can of cherries over the bottom layer. I always get the Favorite Day pie filling. It is delicious!
Step 8: Add the Final Layer & Bake
For the final step, spread the rest of the mixture over the cherries. You can spray this top layer with cooking spray or just bake it as is too.
You will want to bake these bars for at least 30-35 minutes. Just keep an eye on them starting at 30 minutes. I like a crusted top, so I usually go to the 35 minute point.
Vegan Cherry Bars
Ingredients
- 2.5 Cups Quick Oats
- 1 Box Yellow Cake Mix (Vegan)
- 3/4 Cup Vegan Butter Softened
- 21 Ounce Can of Cherry Pie Filling
Instructions
- Preheat the oven to 350. Then, mix together the oats, cake mix, and the softened butter. Spray a 9×13 baking dish, and spread out half of the mixture into the dish. Then, add the can of cherry pie filling. Next, top the bars off with the remainder of the mixture. Bake the bars for 30-35 minutes.
