Turkey Pumpkin Chili Recipe
For this chili recipe, I used my go-to Martha Stewart Dutch Oven to cook this delicious meal. It is the perfect cooking pot to use for chili or soup recipes. It is very heavy, but that helps cook the recipe evenly. I have had the same one for almost 9 years, and it still works perfectly.
Step 1: Start with Cooking Spray
Heat your stock pot or dutch oven, and spray it with whichever type of cooking spray you prefer. Olive oil spray would be a great choice too.
Step 2: Brown the Red Onions
Next, dice red onions, and add in one cup of red onions to the hot stock pot. Put the lid over the red onion to start this process. Leave it over the onions for a few minutes to keep them the right consistency. Then, take the lid off to brown them until desired.
Step 3: Add the Ground Turkey
Next, add in one pound of 85/15 ground turkey meat. Break up the ground turkey as it cooks. Of course, any type of ground turkey will do, but it does make for a better bowl with a little bit of fat in the ground meat.

Step 4: Add in the Vegetable Broth
Add a cup of vegetable broth as the turkey is cooking to keep the flavor and to avoid drying out the meat. You could probably use whatever broth you have available in your pantry, but I prefer the taste of vegetable broth for this turkey chili recipe. For this broth, I went with the Good and Gather Brand at Target. They just carry so many dependable products that taste delicious.
Step 5: Add in the Pumpkin
Once you’ve cooked the ground turkey, mix in a can of pumpkin. It is a similar process to how you would add in tomato paste to homemade pasta sauce. Plus, it just smells amazing!

Step 6: Add the Canned Corn
Then, add in a can of corn. You can drain it if you want to do so, but I like that the juice adds to the chilli. Also, you can use a package of frozen corn too. Either will work and taste delicious.

Step 7: Add the Kidney Beans
So this is where the beans come in. First, start by adding the kidney beans. I used these Good and Gather Dark Red Kidney Beans, but any brand will do.
Also, if you are not a mixer of the beans, I get it. You could just add in the same amount of beans, but use the same type. That would be three cans of your favorite one.
Personally, I love the variety of beans and all the different textures in the chili. My dad, who hates every single type of bean, would just keep adding in more and more corn. 🙂
Step 8: Add the Pinto Beans
Next, add in a can of pinto beans.
Step 9: Add the Black Beans
I know that most people don’t add black beans to chili, but they are a great match with the corn. So if you love black beans, be sure to add them in to your recipe too!

Step 10: Add More Broth and Garlic Powder
Next, add in two more cups of vegetable broth and 1 teaspoon of garlic powder. Stir it all into the recipe.
Just like in my sweet recipes, I love to add in cinnamon. With other types of meal options, I love when I can add in garlic. It just tastes so good and really gives any recipe so much flavor.
Step 11: Bring to a Boil & Enjoy
Bring the entire recipe to a bowl and enjoy. It just looks so good! YUM!
Enjoy Over Pasta or Alone
Like I mentioned before, this chili is great alone or over pasta. My daughters love having the noodles in their bowls, so I do the same.

Remember, if you want to kick up the heat with this recipe, you can add in chili powder or even a little crushed red pepper. Some may dare and even add in some jalapenos. For me, this recipe is just the right amount of heat. You can always taste it at the end and then add in some spicier ingredients.
Another reminder, you can use other types of broth in your pantry. I just always use this vegetable broth for this chili.
