If you made the sun butter shake from last week’s post, keep the sun butter taste rolling with this recipe, too. My kids are sometimes on a sun butter and jelly kick for lunches, so I always have some on hand.
I love homemade breakfast bars! They are especially delicious when they don’t require the oven, too!

Sunbutter No Bake Bars
Jump to RecipeStep 1: The Sunbutter
First, add a cup of sunbutter to a microwave-safe mixing bowl.

Step 2: The Maple Syrup
Then, add a third cup of maple syrup to the mixing bowl. The maple syrup at Aldi is delicious, so I used that brand for this recipe.

Step 3: The Coconut Oil
Then, add a half tablespoon of coconut oil to the bowl, and microwave all three ingredients for thirty seconds.

Step 4: The Oats
Next, add the dry ingredients, starting with a cup of quick oats.

Step 5: The Chocolate Chips & Mix
Finally, add a third cup of chocolate chips. These dairy-free chocolate chips are only available at Target, and they taste great in these bars.

Step 6: Finalize the Bars
Then, in an 8×8 baking dish covered in parchment paper, pour the mixture into the dish. Refrigerate for thirty minutes, cut into bars, and enjoy!
