You may think that the combination of strawberries and lemons should just be used to make lemonade. I get it. This is a totally understandable point of view; however, with these three ingredients, you may change your mind.
This simple strawberry lemon cake is quite an amazing dessert. It will shock most that it isn’t from a gourmet bakery. Not to overemphasize its tastiness, but really, this cake is quite delicious!

Step 1: Preheat the Oven
Before combining the ingredients, preheat your oven to 350°.
You make ask, “Why do you bake at 350 degrees?” To be honest, there is a little history behind preheating the oven to 350°. It is all about The Maillard Reaction. The concept is named after L. C. Maillard, and this practice is also known as non-enzymatic browning. According to Science Direct, it is an extremely complex process and is the reaction between reducing sugars and proteins by the impact of heat. Because of this scientific finding, cakes and all sweets do bake better at this particular temperature.
Step 2: Beat the Eggs
Start this recipe off by cracking four eggs into your mixing bowl. You can then beat the eggs before adding in any other ingredients.

Step 3: The Strawberry Pie Filling
Then, add in one can of strawberry pie filling. I used the Market Pantry brand, but any brand will do. It was hard for me not to take a spoon or two for myself, but I resisted. Sometimes, I top off my ice cream with this sugary strawberry filling. Please don’t judge!
Step 4: Mix the Eggs & Filling
Then, mix the eggs and filling together. By combining these two ingredients together first, the cake will turn out perfectly.

Step 5: Add the Cake Mix
Then, add the lemon cake mix to the bowl. I used the Betty Crocker Super Moist Lemon Cake. It smells as good as it tastes.
For these blueberry lemon cupcakes, I used the same mix. There is just something delicious about mixing fruit into a lemon cake mix.
Step 6: Mix Everything Together
Mix everything together, and with a few more quick and easy steps, your cake will be in the oven.

Step 7: Spray the Pan
Using your preferred type of cooking spray, spray a 9×13 baking pan to ensure that your cake doesn’t stick. This is vital when you don’t add oil to a cake mix. If you don’t spray the pan, your cake may crumble. That would be tragic.
Step 8: Bake for 28 Minutes
Then, even out the batter and place it in the oven for twenty-eight minutes. Be sure to check it around twenty-five minutes or so. Just do the toothpick test.

Step 9: Cool & Ice
Once your cake cools, then you can ice it or simply sprinkle powdered sugar on top. I prefer icing this cake instead of just powdered sugar. Betty Crocker’s vanilla frosting is outstanding, and I use it all the time.
Step 10: Zest It
Then, using a zester, add a little lemon zest on top of the icing. My grandmother requested this, and I have to say, she made quite the call. It is definitely the perfect topping.
I do love the look of the little lemon pieces sprinkled on top of the icing. Quite the presentation! It may only take a few minutes, but it really looks more delicious.
