The kids love that there are noodles with veggies instead of just plain veggies as a side.
You can also bring this for a potluck or to any event. It doesn’t take very long to make, and the ingredients are easy to find at the store.
I used store-bought dressing, but you can make your own dressing if you like that better.

To save time and multitask, boil a pound of spaghetti noodles. Drain them, and let them cool off.
While that is going on you can prep your veggies.
Step 2: The Cucumbers
Once the pasta is done, add 4 small cucumbers to the mixing bowl.
It’s easier to put everything in a bowl with a lid, so that you can just shake it up when you have everything added.
Step 3: The Tomatoes
Then, add in two diced tomatoes. You can also use grape tomatoes.
Step 4: The Peppers
Next, add in two diced peppers.
Step 5: The Cheese
Then, add a cup of parmesan cheese. I used plant-based shredded parmesan. You can use your favorite flavor for this. Also, small chunks of cheese would be delicious too.
Step 6: Italian Dressing & Shake it Up
Finally, add a cup of Italian dressing.
Step 7: Refrigerate & Enjoy
Refrigerate your spaghetti salad for two hours, and enjoy.

Ingredients
- 1 lb Spaghetti
- 4 small Cucumbers
- 2 Tomatoes (diced)
- 2 Peppers (diced)
- 1 cup Shredded Parmesan Cheese
- 1 cup Italian Dressing
Instructions
- First, prepare the pasta noodles, and then start dicing your veggies. Add in cucumber, tomatoes, peppers, cheese, and dressing. Mix it all up, and refrigerate the salad for two hours.
