What Is Red Velvet Cake Mix Made Of?
I always wondered why red velvet was red. I didn’t know whether they used red coloring or not.
If you ever had these same questions, you may be interested in the reason too. You may just think that you just add in a little bit of red food coloring to a cake mix or the batter too.
Well no, you don’t. To be honest, red velvet cake is red because of a chemical reaction.
The cake itself was created as a marketing ploy for a food coloring company during the Great Depression.
Now, this red velvet obsession can pretty much be found in any bakery any day of the week.
The Cookie Recipe First
Step 1: Preheat the Oven
Before mixing the ingredients, just preheat your oven to 350°. By the time the oven is ready, you’ll be prepared to bake the cookies.
Step 2: Add the Cake Mix
Then, add in the red velvet cake mix. I used the Duncan Hines Red Velvet Cake Mix. It is delicious if you decide to make a cake or these cookies. You’ll love it!
Step 3: Add the Eggs
Then, add in two eggs. You only need two eggs as opposed to three or four in a typical cake mix because you want the dough to be easy to form. If you put too many eggs, it will be too much like a liquid.

Step 4: Then the Oil
Using either canola or vegetable oil, add 1/3 cup to the mixing bowl. I used vegetable oil for my batch.
Step 5: Mix It Up
Now that you have dumped your 3 ingredients into the bowl, mix them all together to create your cookie batter. This combo is not going to be the easiest to mix, so try using a wooden spoon to make the process easier.
Step 6: Scoop Cookies
Then, using a cookie scooper that is approximately two tablespoons, create twenty cookies. Be sure to space them enough to not smash into the other cookies. Nothing could be worse than a lop-sided cookie sandwich.
Also, make sure that you try to have each cookie turn out evenly so that you can form the perfect ice cream sandwiches.

Step 7: Bake and Cool
Bake the cookies for 12 minutes, leave them on the cookie sheets for about five minutes, and then place them onto a cooling rack. Once they are completely cooled, you can form these delicious ice cream sandwiches.
Step 8: Start Making the Filling
Then, start making the filling for these ice cream sandwiches. You will start with a box of instant vanilla pudding by Jell-O. I used the box that is 5.1 ounces in order to make sure that I had enough filling for ten sandwiches. The extra filling is never a bad thing. There will always be someone to enjoy it.

Step 9: Pour in the Milk
Next, pour in a cup of milk. I used 2% milk, but you could use any milk of your choice for this too.
Step 10: Add in the Cool Whip
Then, to be sure to thicken the normal instant pudding recipe, add in 1.5 cups of Cool Whip. This way the filling will freeze perfectly between the cookies.
Step 11: Mix and Store in Fridge
Once you mix this vanilla ice cream filling together, stick it in the fridge until the cookies are completely cool.

Step 12: Create Your Sandwiches
Then, using a heaping tablespoon of filling, place it inside of two of the delicious red velvet cookies.
Step 13: Freeze Sandwiches
After you put the filling inside of the sandwiches, place them into the freezer for at least 4 hours. I just kept them on a baking sheet covered in parchment paper. Then, I covered them with plastic wrap while they were in the freezer.
