Jump to RecipeStep 1: The Wet Ingredients & Mix
Start this recipe by preheating the oven to 350 degrees. Then, in a large mixing bowl add 1 cup of pumpkin, 1 teaspoon of vanilla, 1/3 cup syrup, and 1 egg.
You can use maple syrup or pancake syrup. I used this Log Cabin Syrup for my batch.
You can mix these wet ingredients with a whisk.
Step 2: The Dry Ingredients & Mix
Then on top of the wet ingredients, add 2 cups of quick oats, 1 teaspoon baking powder, 1 teaspoon pumpkin spice, 1/2 teaspoon of cinnamon, 1/4 teaspoon salt, and 1/4 cup of chocolate chips.
For the salt, I used pink salt, and for the chocolate chips, I used the plant-based ones by Nestle. They taste great and are dairy-free.
Mix all ingredients using a wooden spoon.
Step 3: Prepare Cookies to Bake
First, cover a large baking sheet with parchment paper or use a silpat mat, and place twelve cookies onto the sheet. Use a cookie scoop to do so, and then slightly smash the cookies down with a spoon.
Bake for fifteen minutes. You should be able to make 18 cookies with this recipe.

- 1 cup Pumpkin
- 1 tsp Vanilla
- 1/3 cup Syrup
- 1 Egg
- 2 cups Quick Oats
- 1 tsp Baking Powder
- 1 tsp Pumpkin Pie Spice
- 1/2 tsp Cinnamon
- 1/4 tsp Salt
- 1/4 cup Chocolate Chips
Instructions
- Preheat the oven to 350 degrees. Then, add all the wet ingredients together. Then, add all the dry ingredients together. Scoop cookies onto a baking sheet covered with parchment paper. Then, bake cookies for 15 minutes. You should be able to make 18 cookies total.
