During the colder months of the year, I love making different soup combinations. I will sometimes double the recipe so that I can enjoy it for lunch and dinner too. You could also pack it in a thermos for your kids to have a warm lunch option too.
Recently, my daughter who is allergic to eggs did a food challenge to see if she can eat ravioli and tortellini. Now that she has passed the food challenge, we have been enjoying a ton of both kinds of pasta.
To make a complete meal out of a package of tortellini, this soup is perfect for a filling warm dinner that will not take over thirty minutes to make.

One Pot Tortellini Soup
For this recipe, I used my Dutch Oven. For Christmas one year, I purchased one of these as a gift. The Food Network is a great brand, and if you have a coupon at Kohl’s, you can get a deal on it.

Over medium heat, add two tablespoons of olive oil.
Step 2: The Garlic
Then, add a tablespoon of minced garlic. When I’m at Target, I just pick this one up.
Step 3: Diced Onion
Then, add one diced medium red onion.
Step 4: The Water
To ensure that it cooks without burning, add a quarter cup of water. Place the lid on top and let the onion cook.
Step 5: The Ground Turkey
After cooking the onion, add a pound of ground turkey. While it cooks, be sure to break it into smaller pieces for the soup.
Step 6: The Diced Tomatoes
Once the ground meat cooks, add a can of diced tomatoes. You can also use a few fresh-cut tomatoes as well. I used a can of diced tomatoes that also had a little basil, garlic, and oregano seasoning. You can find this type at Aldi.
Step 7: Parmesan Cheese
Then, mix in a cup of grated parmesan cheese.
Step 8: Chicken Broth
Then, add 32 ounces of chicken broth. Allow this mixture to come to a boil.
Step 9: Tortellini
Once the soup boils, add 9-10 ounces of tortellini. I used cheese tortellini for this soup. They should cook completely after ten minutes.
Step 10: The Spinach
Then, add two cups of fresh spinach. I always add this last so that it doesn’t completely disappear if added too early in the process.
One Pot Tortellini Soup
Ingredients
- 2 tbsp Olive Oil
- 1 tbsp Minced Garlic
- 1 Diced Red Onion
- 1 lb Ground Turkey (85/15)
- 1 can Diced Tomatoes
- 1 cup Grated Parmesan Cheese
- 32 oz Chicken Broth
- 10 oz Tortellini
- 2 cups Fresh Spinach
Instructions
- Add olive oil, garlic, diced onion, and water first. Cook onion over medium heat. Then, add in ground turkey. Cook into small pieces. Then, add diced tomatoes, parmesan cheese, and chicken broth. Allow to come to a boil. Then, add tortellini for at least ten minutes. Lastly, add spinach. Allow to cook through, and serve.
