Non-Dairy Nut Free Cookie Cake
Jump to RecipeStep 1: Cake Mix
Start with a yellow cake mix like the Betty Crocker one. There is only wheat in the mix.
Step 2: The Eggs
Then, add in two eggs.
Step 3: The Oil
Next, add in 1/3 cup veggie oil.
Step 4: The Allergen-Free Chocolate Chips & Mix
Then, add in one bag of these mini chocolate chips. There are 10 ounces of mini chips in the bag. The brand Good Life is fabulous. The products are nut-free, gluten-free, and vegan for all of those who manage food allergies. I love this brand and the mini semi-sweet chocolate chips are outstanding.
Step 5: Prepare to Bake
Then, using a 9×13 pan, spread the cookie cake batter evenly after spraying the pan with cooking spray. I used this disposable pan, which is great for parties and events. There are two in a package with lids. Target just rocks doesn’t it?
Be sure to bake the cake between 22-25 minutes at 350 degrees.
Step 5: Let It Cool & Ice
Then, after the cake completely cools, ice it. You can purchase this icing kit on Amazon. It is great for all decorating levels, even a beginner like me.
Also, I used the Funfetti Icing because it contains no milk ingredients.
Of course, I am not the icing expert by any means, but I gave it my best shot with the new icing kit.
