With a quick look in the pantry, I realized that I had some shredded coconut leftover from another recipe, and I thought why not make some coconut bars. My husband is obsessed with anything coconut, so I figured he would finish these off in no time.
The recipe is so simple, and you’ll love that you won’t have to put the oven on in the summer to make these. You can melt the coconut oil in the microwave, and that’s pretty much the only appliance you’ll need. Well, you will also need the freezer.
The bars have the best consistency too. They are just such a delicious no bake treat that all will want to enjoy at least one.

Jump to RecipeStep 1: Add the Shredded Coconut
First, add three cups of shredded coconut into your mixing bowl.
Step 2: Prepare the Coconut Oil and Add It
Then, add one cup of melted coconut oil into the bowl. I love the Good & Gather one. I just put some in a microwave bowl, and it melts rather quickly.
Step 3: The Maple Syrup and Mix
Then, add a quarter cup of maple syrup to the bowl. Stir all of the ingredients together. It looks like it is never going to work, but trust me, it will come out perfectly.
Step 4: Freeze Those Bars and Enjoy
Then, evenly distribute the mixture into a 9×7 or an 8×8 baking dish covered in parchment paper. Freeze the bars for at least two hours, and then cut them up to enjoy.

Ingredients
- 3 Cups Shredded Coconut
- 1 Cup Coconut Oil (Melted)
- 1/4 Cup Maple Syrup
Instructions
- Mix the shredded coconut, melted coconut oil, and maple syrup together. Then, place the mixture in a 9×7 or 8×8 pan covered in parchment paper. Place the pan into the freezer for about two hours, and then cut it up into bars to enjoy.
