These easy no bake caramel cookies are quite a delicious treat. I absolutely love caramel, and anytime I can put it into a dessert, I do. These no bakes are a sweet combo of chocolate, peanut butter, and caramel. Toss these little cookies into your lunch box for a tasty treat during the day. They are light and airy, and perfect for a during the day dessert. This post is all about easy no bake caramel cookies.
There is just something about caramel that I can’t get enough of it. I love making salted caramel fudge, salted caramel hot chocolate, and these no bakes too. If you love caramel too, these no bake cookies are for you. The recipe is easy to follow and takes no time at all.
They are yummy and addicting and even though you can make two and half dozen from this recipe, it is never enough. They will want more and so will you. 🙂

No Bake Caramel Cookies
Jump to RecipeStep 1: Start with the Milk
In a large pot, add in a half cup of whole milk. You can use other types of milk, but I prefer to use whole milk. Plus, I always have some on hand.
Be sure to keep the heat on medium-low. Also, stir the mixture constantly so that it doesn’t burn. You can use a wooden spoon to do this.
Step 2: Add the Butter
Then, add in a stick of butter. You can cut it into pieces so that it melts down quickly. I love using salted butter for all of my recipes, but unsalted would work too.
Step 3: Add Cocoa
Then, add a quarter cup of unsweetened cocoa powder. I used the Aldi brand for this, but any brand will work.
Step 4: Add the Sugar
Then, add two cups of sugar.
Step 5: Boil & Stir
Be sure to let these ingredients come to a boil for about a minute and a half. Keep stirring this combo so that it doesn’t burn.
Step 6: Add the Peanut Butter
First, turn off the burner. You won’t need the heat for the rest of the recipe.
Then, add a cup of creamy peanut butter and a tablespoon of vanilla.
I have been using Skippy Creamy Peanut Butter. Amazon sells a 5lb jar of it, which is super convenient considering the amount of it my kids eat.
Plus, it is nice to have that much around when I am making this peanut butter fudge recipe too.
Step 7: Add the Vanilla & Mix
Then, mix these ingredients together as they melt down into a creamy paste.
Step 8: Add the Oats
Then, add in three cups of instant oatmeal. For this, I always buy the Good & Gather brand at Target. They work for all the recipes I have on the blog, and they are decently priced.
Step 9: Add the Caramels & Mix
Then, add in a cup of baking caramels to the mix. I used these Kraft Caramel Bits.
Step 10: Scoop No Bakes & Refrigerate
Scoop approximately 30 no bakes from this recipe. Then, press each cookie down with a fork. Then, refrigerate them for about forty-five minutes.
No Bake Caramel Cookies
Ingredients
- 1/2 Cup Whole Milk
- 1 Stick Butter
- 1/4 Cup Cocoa Powder
- 2 Cups Sugar
- 1 Cup Creamy Peanut Butter
- 1 Tbsp Vanilla
- 3 Cups Instant Oatmeal
- 1 Cup Baking Caramels Bits
Instructions
- In a large pot on the stove on medium-low, add a half cup of milk.
- Then, add in a stick of butter, 1/4 cup of cocoa powder, and two cups of sugar.
- Then, stir all of these ingredients to a boil for at least a minute and a half.
- Next, turn off the burner, add in a cup of peanut butter and a tablespoon of vanilla.
- Then, mix, add three cups of oats, and a cup of caramel bits.
- Place 30 cookies on a baking sheet covered in parchment paper. You can press each one down with a fork.
- Place cookies in the fridge for at least forty-five minutes and enjoy.
