Mood Boosting Bark
Jump to RecipeStep 1: Prepare the Yogurt
First, start off with the yogurt. I went with a non-dairy option in this unsweetened vanilla coconut yogurt. It’s delicious and the kiddos love it too. So that’s a win-win.
You can use regular yogurt too. Greek vanilla yogurt would be a delicious substitute too.
Spread two cups of the yogurt onto a baking sheet covered in parchment paper.
Step 2: Add the Berries
Then, sprinkle a cup of blueberries and a cup of sliced strawberries onto the tray.
Step 3: Chocolate Chips
Then, sprinkle a half cup of dark chocolate chips over the yogurt evenly. For these, I used vegan chocolate chips I found on Amazon. You could use any chocolate chips you love.
Step 4: The Almonds
Then, sprinkle a half cup of shaved almonds over all the other ingredients.
Step 5: The Chia Seeds
Then, sprinkle 2 tablespoons of chia seeds on top of everything.
Step 6: Finishing Touches & Freeze
Finally, be sure to use a spoon to smash all of the ingredients directly into the yogurt. You will want to do this so that everything freezes evenly.
Be sure to freeze the bark overnight or for at least 5 hours.
When you take it out, break it up so that you can make smaller sections to enjoy. In the meantime, toss it in a freezer container and continue to enjoy it.

Ingredients
- 2 Cups Unsweetened Vanilla Coconut Yogurt
- 1 Cup Strawberries
- 1 Cup Blueberries
- 1/2 Cup Chocolate Chips
- 1/2 Cup Shaved Almonds
- 2 tbsp Chia Seeds
Instructions
- On a baking sheet covered in parchment paper, evenly spread two cups of yogurt. Then, add the ingredeitns over top of the yogurt. Be sure to press everything into the bark so that it all freezes well. Then, freeze the bark for at least five hours or overnight. Once, it is frozen, break it into pieces to enjoy.
