These date bars are so easy to make. You’ll just need your food processor to make these delicious treats. You don’t need to even turn on the oven to make this healthy dessert either. I love anything that is a no bake recipe.
The combination of peanut butter and cocoa powder is just so good. For this recipe, I used natural peanut butter, but you can also use regular peanut butter too.
On a side note, when I was making this recipe, my kids were running around the kitchen demanding snacks. I was trying to toss these ingredients into the food processor as quickly as possible. All I wanted to do was get this recipe in the fridge, and cut up some fruit for their snacks. During the chaos, I ended up putting the lid of the food processor on the wrong way. I tried everything to get it off without breaking the lid. It was extremely frustrating. Just at the moment I was going to give up, and forget about the bars, my husband was home in time to get it off. 🙂

Healthy No Bake Date Bars
Jump to RecipeStep 1: Add the Dates
You will need to add two cups of dates. Be sure to remove the pits before adding these to the food processor.
Step 2: Add the Almonds
Then, add a cup of shaved almonds to the mix. You could use another type of nut if you prefer.
Step 3: The Peanut Butter
Then, add a third cup of natural peanut butter. You can use regular JIF too.
Step 4: The Coconut
Then, add a half cup of coconut flakes.
Step 5: Some Cocoa Powder
Then, your last ingredient will be two tablespoons of unsweetened cocoa powder.
Step 6: Mix
Then, mix everything together in the food processor.
Step 7: Place in Dish & Refrigerate
Place in a 7×11 baking dish that is covered in parchment paper. You can use a spatula or a wooden spoon to form the bars into the dish evenly. You could always use your hands too. Then, toss them into the fridge for about an hour.

- 2 Cups Dates (pitted)
- 1 Cup Shaved Almonds
- 1/3 Cup All Natural Peanut Butter
- 1/2 Cup Coconut
- 2 tbsp Unsweetened Cocoa Powder
Instructions
- Add the dates, almonds, peanut butter, coconut, and the cocoa powder to the food processor. Once everything is mixed transfer the mixture to a 7×11 baking dish covered in parchment paper. Form the bars into the dish, and then refrigerate the bars for about an hour before enjoying them.
