This healthy no bake cookie recipe is simple and delicious. With a love for dessert, this is a satisfying way to enjoy sweets without overdoing it. I have to admit I probably eat dessert 6 out of 7 nights of the week, so sometimes I like to switch it up and swap a bundt for a healthier option. This post is all about a healthy no bake cookie recipe.
Making cookies can sometimes be quite the process, but with this no bake recipe, the prep time is minimal. After mixing this recipe up and scooping it onto cookie sheets, you just need to let them sit in the fridge until they are ready to go.

Healthy No Bake Cookie Recipe
Step 1: Mash Banana
Start this recipe by mashing a banana. Yes, that doesn’t look all that appetizing, but not to worry, it will end up tasting delicious.
Step 2: Add Milk
Then, place a pot on a medium-low heat on the stove, and add a half cup of milk. You can select whichever milk you prefer or have on hand. I love using almond milk for this recipe, but I used 2% since I didn’t have it.
Step 3: Add Honey
Also, add in a third cup of honey.
Step 4: Add Coconut Oil
Then, add 2 tablespoons of coconut oil.
According to healthline.com, “Coconut oil is a good source of antioxidants, which provide anti-inflammatory, anti-diabetic, and brain-protective effects.” With this information, it makes sense to swap coconut oil into your diet when you would normally use olive oil or butter. I might just make the switch more often after reading this article.
Step 5: Add Peanut Butter
Next, add in a half of a cup of peanut butter. Be sure that it is creamy peanut butter.
Step 6: Add Cocoa Powder
Then, add a quarter cup of cocoa powder.
Step 7: Add Vanilla
Then, add in a teaspoon of vanilla extract.
Step 8: Whisk
Next, whisk all the ingredients together.
Step 9: Add Banana
Then, add in the mashed banana to the heated ingredients.
Step 10: Add Salt
Next, add a sprinkle of salt.
Step 11: Add Oats
Then, while the other ingredients are still warm add three cups of quick oats.
Step 12: Mix
Mix that all together so that all the ingredients are evenly spread throughout the oats.
Step 13: Scoop Cookies
Then, scoop the cookies onto the cookie sheet. You should be able to make at least 18 no bakes. Once, they are scooped out, use a fork to gently press them down. When you press them down with a fork, they form a perfect circle that looks like a baked cookie.
Step 14: Refrigerate
Once you have your cookies flattened, stick them in the fridge for at least forty-five minutes.
