There is nothing easier than starting off a recipe with a box of cake mix. I just love recipes like this as it eliminates so many steps, and yet, you still get a delicious dessert.
You can search the quick and easy recipes on the blog and find several recipes that start with just a simple cake mix. It is my go-to for any event. Plus, I have used these recipes as they are frequently egg-free. With my daughter’s allergy to eggs, these recipes are great for her to take part in dessert time too. Nonetheless, this recipe does have eggs, so this is not for her.

Step 1: Preheat the Oven
Preheat the oven to 350° for this recipe.
Step 2: Start with a Red Velvet Cake Mix
Then, add in a box of red velvet cake mix. This isn’t always easy to find. I was, fortunately, able to find a box at Target. Now I know to stock up on this cake mix when I see it available. Here’s the box I used.
I also use the red velvet cake mix for these delicious ice cream sandwiches.

Step 3: Add the Oil
Next, add in a 1/3 cup of oil. I used vegetable oil for these cookies, but canola oil would work as well.
Step 4: Add the Eggs
Then, add two eggs to the mix. At first, you’ll think you need to put three, but three is just too many. I have tried this a few different ways, and two eggs are plenty for these cookies to turn out perfectly.

Step 5: Add the White Chocolate
Then, add in a cup of white chocolate baking chips. For this recipe, I went with the Nestle’s brand, but any brand would work.
Step 6: Mix It Up
Once all of the ingredients are in the bowl, you can mix it up. This mix gets very thick quickly. Not to worry, don’t stress if you wonder if this batter is going to work out. It will, just keep mixing. 🙂
