If you are craving pumpkin but don’t want to spend so much time baking a batch of cookies, this is your go-to recipe. Using two simple ingredients, you can enjoy your fall cookies in no time.
These pumpkin cookies don’t have eggs, so if you have an egg allergy this recipe will work for you. Some of my other recipes are egg-free too.
I try to avoid eggs in recipes that Sadie might like because she has an egg allergy. She can eat a baked egg, but normally, cookies are not baked long enough for her to eat. This recipe is perfect and allows her to enjoy these treats worry-free. She likes these pumpkin cookies with icing every time. 🙂

Easy Pumpkin Spice Cookies
Step 1: Preheat the Oven
Start this recipe by preheating the oven to 350°.
Step 2: The Cake Mix
First, add the spice cake mix to your mixing bowl. I used the Betty Crocker Super Moist Spice Cake Mix. It is always outstanding!

Step 3: Add the Pumpkin
Then add in a 15-ounce can of pumpkin and mix it all together. It takes a few minutes, but the consistency ends up being perfect for these cookies.
Step 4: Create the Cookies
Next, using a cookie scoop, create between 20-24 cookies.
You can probably get at least 20 and perhaps 24 depending on how large you make the cookies.
I could make 20 cookies this time, but I have been able to make 24. Just make sure that you keep the cookies the same size so that they bake evenly.

Step 5: Bake Those Cookies
Once you have your cookies prepared, bake them for at least 18 minutes. Of course, try to be close by to watch them so that they don’t burn.

Step 6: Icing Optional
If you are interested, try out a little cream cheese frosting on these pumpkin cookies. You’ll love them!
One year when I made these, I accidentally put them on top of the oven when I iced them. Then, I baked my sweet potato casserole and was so happy to bring both items to our Thanksgiving party.
Once I arrived, I proudly took the foil off of the cookie tray, only to see cookies that were practically floating in melted icing. Hence, don’t make the mistake I made; just one of my many baking blunders.
