Easy Mini Cherry Pies
Step 1: Preheat the Oven
Start this recipe off by simply preheating your oven to 350°.
Step 2: Let the Pie Crusts Soften
Then, leave your pie crusts at room temperature to be sure that they are easy to work with. I used the Pillsbury Pie Crusts for this recipe, but any available brand will work. Also, I did use both crusts for the pies. From these two crusts, I was able to make 36 mini cherry pies.
Step 3: Spray the Mini Muffin Pans
Then, spray your mini muffin tins. You can grab these mini muffin tins from Target if you don’t have any on hand.
I have mini muffin tins thanks to my mom gifting them to me one year for the holidays. They are so much fun to use, and I just love creating mini treats. Be it for a quick breakfast bite or a sweet treat, you’ll make use of these pans.
It is nearly impossible to just spray one little muffin at a time, so I just sprayed the entire pan with cooking spray.

Step 4: Prepare the Mini Pie Crusts
Then, prepare the mini pie crusts. My mini pies look far from perfect. Just try your best to form little pie molds. It may even be easier to use a rolling pin to spread the pie crusts even thinner too.
Regardless of how they look, just be sure to make them somewhat similar in thickness. This will allow them to all be done at the same time when you bake them.
Step 5: Add the Cherry Filling
Then, fill them with the oh-so-sweet cherry pie filling. You could do this by using a 1/2tbsp. I’d say that each one pretty much just takes the 1/2tbsp of filling. From one can of pie filling, you will easily be able to fill all 36 mini pies with the cherry filling.

Step 6: Crush the Graham Crackers
Then, crush up the graham crackers. So for this recipe, I used the Ninja to crush up the graham cracker. I made a ton of graham cracker topping because my kids love to put this little mix on top of their ice cream, yogurt, and pudding.
If you aren’t going to use this mix as we do at my house, then just make 1/3 of this combo.
For this topping and the extra, use nine graham crackers, which is an entire package.

Step 7: Add the Cinnamon
Then, add a 1/2 tsp of cinnamon to the mixing bowl with the graham crackers. If you don’t want to use a mixing bowl, you can keep all of the ingredients together in the Ninja or a blender too.
Again, if you are just making enough for the pies, just sprinkle some cinnamon into the bowl.
If you aren’t a huge fan of cinnamon, you can just forgo this ingredient. Personally, I love to add cinnamon to recipes. Some even say that cinnamon does have health benefits too.
Step 8: Add the Brown Sugar
Then, add in 2 tbsp of brown sugar. I used dark brown sugar, but the light will work as well.
If you are only making the topping, just use 1.5 tsp of brown sugar.
Step 9: Mix It Up
Then, mix it all together to create the most delicious pie topping.
Be sure to save the extra topping for your morning yogurts, your ice cream, or your pudding creations.
Step 10: Add the Topping to the Mini Cherry Pies
Then, just spoon the topping over the pies. You are pretty much going to cover the entire top of the pies with the topping.
Step 11: Bake Those Pies
Then, bake the mini pies for about 15 minutes. They should be bubbling when you take them out of the oven. The smell is just outstanding too.
