Check out this easy cookie cake recipe. With my daughter recently being able to eat a baked egg at a lower baking time, I had to make her a few cookie cakes to celebrate. A cookie cake is such a classic dessert that is so hard to turn down. With just a few quick steps, this recipe is super simple and makes for a great cake for all. It is hard to find someone who doesn’t want at least a little sliver of cookie cake. Nonetheless, this cake is perfect for pretty much every occasion. With just four ingredients and frosting, you can put this in the oven in less than ten minutes.
The cookie cake is just so delicious and scrumptious. You could slice it up and serve it with ice cream or even top it off with a little whipped cream too.

Easy Cookie Cake Recipe
Step 1: Preheat Oven
First, preheat the oven to 350°.
Step 2: Start with the Eggs
Then, beat two eggs before adding any other ingredients.
Step 3: Then the Cake Mix
Then, add a box of yellow cake mix.
Step 4: Add the Oil
Next, add a third cup of vegetable oil.
Step 5: Add the Chocolate Chips
Then, add in a bag of chocolate chips. I used the Good & Gather chocolate chips, but you could use any brand you prefer.
Step 6: Mix
Then, mix it all together. The batter will be very thick. Remember, a cookie cake doesn’t really rise very much, so the batter has to be pretty thick. Plus, you are putting a bag of chocolate chips inside, so that also makes this batter hard to mix too.
Step 7: Spray Cake Pans
Then, be sure to spray your cake pans. If you use two cake pans, then you will have just enough batter to fill them with a thin layer.
Step 8: Pour Batter & Bake
Pour the batter evenly into the pans. Be sure to spread the batter out. You will want to use a harder spatula or a spoon to do this. You will bake the cookie cake in these pans for 18 minutes. If you use a 9×13 baking dish, you’ll need to bake it for about 22-25 minutes. Just be sure to monitor the cake to be sure that it doesn’t burn.
Step 9: Cool & Decorate
Then, once they cool, you can add icing and decorate the cakes as you like. I went the easier route and just used this simple frosting bag by Pillsbury.
