Easy Chickpea Salad

Add two cans of rinsed and drained chickpeas in a large mixing bowl with a lid. Chickpeas are the same as garbanzo beans. I will try to buy the low-sodium cans if they are available.

Step 2: Red Onion
Then, add half of a red onion diced.

Step 3: Mayo
Then, add two tablespoons of mayo, or for my family we use the vegan mayo. It tastes the same and does not have eggs as my oldest daughter is allergic to them.

Step 4: Mustard
Then, add two tablespoons of yellow mustard. You could use your favorite type of mustard as a substitute too.

Step 5: Relish
Then, add a third cup of relish. You can use sweet or dill. I love sweet relish so that’s what I added.

Step 6: Mix & Enjoy
Then, mix all the ingredients and chill for thirty minutes.
