In college, I worked at Panera and fell in love with the cinnamon chip scones. I would grab one with a coffee all the time, and this recipe is so similar to those delicious scones.
If you can find a bag of cinnamon baking chips, this recipe is easy to follow, and you won’t believe how good these little scones are. This recipe makes 8 scones. You can bring these scones to a brunch party or enjoy them after dinner with a chai latte or tea.

Cinnamon Chip Scones Recipe

Start this recipe off by preheating the oven to 400°.
Step 2: Add the Butter
Start with a stick of butter. Make sure that it is still chilled, and then cut it up into smaller pieces.
Step 3: Add the Flour and Cake Mix
Then, add 1¼ cup of all-purpose flour and 1¼ cup of a spice cake mix. If you aren’t a fan of a spice cake mix, you could use a yellow or vanilla cake mix as well.
Step 4: Cut in the Butter
Then, using two butter knives, cut the butter into the dry ingredients.
For this process, you are just cutting the butter into smaller pieces, so that it is evenly distributed into the dry ingredients. This process will help the scones bake evenly and taste so delicious.
The butter still remains in chunks but it is evenly placed throughout the batter for perfect placement when baking.
Step 5: Add the Heavy Whipping Cream
Next, add ¾ cup of heavy whipping cream. Make sure it is heavy whipping cream to achieve the right texture for these scones.
Step 6: Add the Cinnamon Chips
Then, add a cup of cinnamon baking chips. I really like the Hershey’s ones.
Step 7: Mix
Next, mix all the ingredients together. You may question if this going to work out when mixing because it becomes very clumpy. Really until you form the circular disc this is very messy mixture.
Step 8: Form a Circular Disc & Cut it into 8
Then, take the ingredients, and literally, dump them onto a silpat mat or parchment paper.
Again, this process is not pretty, but it will work. Form the ingredients into a circular disc as best as possible. Smooth the mixture together, and it will all come together nicely.
Then, cut it into 8 pieces like a pizza. You can spray the knife with cooking spray to make this process easier. Then, just position them to not touch on the mat before you put them in the oven. Don’t go crazy making them look perfect.
Unless you have a scone pan, these are going to look uneven and that is okay. If you want a scone mold, this works well and has great reviews.
Step 9: Bake
Then, bake the scones for 15 minutes and enjoy.
You can ice the scones or put a little powdered sugar on them. They are delicious just as they are too.

- 1 Cup Cinnamon Baking Chips

Then, cut the butter in by using two butter knifes to ensure that the butter is evenly spread throughout the dry ingredients. Then, add in 3/4 cup of heavy whipping cream. Then, add in a cup of cinnamon baking chips and mix. Then, dump the ingredients onto a silpat mat or parchment paper onto a cookie sheet. Then, be sure to form a circular disc. Then, cut the disc into 8 scones. Bake for 15 minutes, and enjoy.
