Step 1: Preheat the Oven
Start this recipe off by preheating the oven to 350°.
Step 2: Start with a Cake Mix
Then, add a white cake mix to the mixing bowl.
Like so many of the quick and easy recipes on the blog, just start with a cake mix and within less than ten minutes, your cupcakes will be in the oven.
Sometimes it is just so nice to have such an easy recipe to go to. With so many events that pop up, it is always a good idea to have a few cake boxes in the pantry.

Step 3: Add 3 Eggs
Then, add in three eggs with the white cake mix.
Step 4: Mix
Next, mix the white cake mix and eggs together before adding the pie filling. That way, you can evenly distribute the eggs. Honestly, they don’t turn out the same if you just add everything in at the same time and then mix it.

Step 5: Add Cherry Pie Filling & Mix
Then, add in a 21 ounce can of cherry pie filling, and mix everything together. Doesn’t that just look amazing? It was hard for me not to just spoon this filling in.
The beauty of these cupcakes is that cherry pie filling is available all year, so no matter what, you can always make this quick recipe.
Step 6: Spray Cupcake Liners
Before adding the batter, be sure to spray all the cupcake liners. This way, the cupcakes don’t stick to the papers. Since you aren’t adding oil to the recipe, it is best to spray the liners.
I have made this mistake so many times by not spraying the liners. The cupcakes end up breaking up, and it is a complete mess.

Step 7: Add Cupcake Batter
Then, add the cupcake batter to 18 cupcake liners.
For this process, I just used a cookie scoop to make sure that they were all even. You can grab this one from Amazon. I have had it for a couple of years, and it still looks great after being in the dishwasher several times.
Step 8: Bake the Cherry Cupcakes
Bake these cupcakes for between eighteen and twenty minutes. Be sure to keep your eye on them as, depending on how much batter you used in each one, you may need one or two minutes more or less. To be sure they are done, just do the toothpick test. If it comes out clean, they are done to perfection!

Step 9: Cool & Ice
Let the cupcakes cool and then you can ice them with whichever icing you prefer. I love how easy it is to use the Pillsbury Vanilla Flavored Filled Pastry Bag.
