First, preheat the oven to 350 degrees, and then mash three medium-sized bananas in a large mixing bowl. The riper the bananas, the better for this process.

Step 2: The Eggs
Then, add three eggs to the mixing bowl.

Step 3: The Oil
Next, add 1/2 cup of vegetable oil and mix. Make sure to blend all ingredients until a somewhat smooth consistency. It won’t be perfect due to the bananas.

Step 4: The Cake Mix
Finally, add the cake mix. I used a vanilla cake mix, but any type would work. Chocolate, spice cake, yellow, or white are all great choices.

Step 5: Prep the Muffins
Then, pour the batter into 18 muffin liners. Spray the liners with cooking spray and then fill them three-quarters of the way. Bake for at least 20 minutes at 350. Spraying the liners really makes removing the papers easier.

- In a large mixing bowl, mash the bananas, and add the eggs and veggie oil. Mix all of the ingredients together, and then add in the box of cake mix. Mix all items, and then fill the muffin liners about 3/4 full. Bake the muffins at 350 for twenty mintutes and enjoy! You should be able to make about 18 muffins.
