A new year always gets you thinking about new resolutions. As I thought about my goals for the year, I also thought about my health. When I was younger, everyone always reminded me that breakfast was the most important meal of the day. I always made a point of eating it, but as I got older and now have kids, this isn’t always the main priority. I do pack a breakfast to go, but it doesn’t always get eaten until closer to lunch.
As a teacher, I have to get up early for work, and I normally toss a breakfast bar or a yogurt into my bag. These are all good options, but for the most part, I end up eating these items with my lunch. I am too busy running around doing who knows what that all I end up with is a ton of coffee in my stomach most mornings.
If you are dealing with a similar delay in your breakfast routine or seem to skip breakfast, try enjoying one of these smoothies. For the smoothie, I use plant-based protein, which is rather filling and quite delicious in the vanilla flavor.

Blueberry Kale Protein Smoothie
Step 1: The Kale
Start with a cup of kale.
By starting with a cup of kale, you are starting with one unbelievably healthy ingredient.
According to Healthline.com, a cup of kale contains:
- Vitamin A: 206% of the DV (from beta-carotene)
- Vitamin K: 684% of the DV
- Vitamin C: 134% of the DV
- Vitamin B6: 9% of the DV
- Manganese: 26% of the DV
- Calcium: 9% of the DV
- Copper: 10% of the DV
- Potassium: 9% of the DV
- Magnesium: 6% of the DV
- It also contains 3% or more of the DV for vitamin B1 (thiamin), vitamin B2 (riboflavin), vitamin B3 (niacin), iron and phosphorus
- This is coming with a total of 33 calories, 6 grams of carbs (2 of which are fiber) and 3 grams of protein.
It really is crazy that this little cup of greens can be that nutrient-dense.
Step 2: The Milk
Then, add in a cup of milk. You can select any milk you like. I have been purchasing this Unsweetened Vanilla Almond Milk at Target. Of course, I should just get two cartons a week as my husband has been using it for his smoothies too. It adds a little sweetness, but without a lot of extra sugar.

Step 3: The Plant Protein
Then, add in a scoop of vanilla plant-based protein powder.
When I made these smoothies, I never thought that I would enjoy drinking them. To be honest, when my husband made smoothies in the past, it would disgust me that he was smashing all of that stuff into a container. Now, I see the light! I see the reason behind the smoothie, and I am indeed sold. Plus, it is rather refreshing too.
Step 4: The Blueberries
Then, add in a half-cup of blueberries.
Why blueberries you might ask? Well, I do love blueberries, and I always have either frozen or fresh, since my kids love them too.

Step 5: The Ice
Next, add in a cup of ice. This isn’t completely necessary, but I like the consistency more with the ice.
Step 6: Mix It Up & Enjoy
Then, blend the smoothie and enjoy.
For smoothies, I like to use the Ninja because it is easy to use and dishwasher safe.
