With a recent craving for Dr. Pepper, I had to try out this combo. It is a sweet surprise with a light and fluffy texture. You can leave these cupcakes plain or add icing. Of course, I opted for icing. 🙂
My kids really enjoyed these little gems and so did my mom and gram. Let me know if you like the combo. When you make the recipe, the cake mix will start fizzing a little when you add the soda. My kids just thought that was so cool. The process is easy and super fun for the kiddos.

2 Ingredient Dr. Pepper Cupcakes
Jump to RecipeStep 1: Preheat the Oven
First, preheat the oven to 350 degrees before you start whipping up your cupcakes. You will more than likely be done mixing before the oven is ready to go.
Step 2: Start with Cake Mix
Then, add a box of red velvet cake mix. I used this one from Target.
Step 3: Add the Dr. Pepper
Next, add 12 ounces of Diet Dr. Pepper to the mix. It will fizz up. The kids loved to see this happen.
Step 4: Mix
Then, mix the ingredients together. I used this new whisk. It made the process super easy.
Step 5: Spray Liners
Before adding the batter, be sure to spray your cupcake liners. Since the cupcakes don’t have oil, this process makes them so much easier to come out of the paper without crumbs and a mess.
Step 6: Fill Cupcakes & Bake
Then, fill each cupcake liner. You should be able to make 18 cupcakes with this recipe. Be sure to bake them for about 22 minutes. I always do the toothpick test for this process.
Step 7: Ice Those Cupcakes (Optional)
Then, if you want to ice these cupcakes, you won’t regret it. You could also add powdered sugar. They are quite scrumptious either way.

Ingredients
- 1 Box Red Velvet Cake Mix
- 12 oz Diet Dr. Pepper
- 1 container White Icing (optional)
Instructions
- Preheat the oven to 350. Mix together the red velvet cake mix and the 12 ounces of Diet Dr. Pepper. Spray cupcake liners, and fill each liner. Bake for about 22 minutes. Be sure to keep an eye on them. Be sure to complete the toothpick test. Let them cool, and you can put icing on them if you want to. Also, you could sprinkle some powdered sugar on top too.
